Mountain savory flourishes in the heart of our historic plot, where polyculture takes on its full meaning. Intertwined with lavender, immortelle, thyme and rosemary, it forms a vibrant, fragrant ecosystem, highly prized by nectar-seeking foragers. Late summer marks its peak. It’s at this precise moment that we hand-pick its precious leaves for distillation just around the corner, in our workshop. This proximity to the distillation site guarantees a savory hydrosol of rare intensity, capturing the very essence of this plot of land cradled by the symphony of bees.

The history and traditional uses of mountain savory

Long before our time, mountain savory was renowned for its powerful antiseptic properties. Known to the ancients for its impressive anti-infectious powers, it has been handed down from generation to generation like a priceless treasure. Its Latin name, Satureja montanais evocative. It refers to the “satyr of the mountains”, a reference to its supposed aphrodisiac properties, which led to it being banned from certain monasteries in the Middle Ages. A ban which, far from erasing it from our memories, has rather kept its legend alive.
